- 3oz caster sugar
- Grated zest and juice of 1 juicy lemon
- 2 size 1 (large) eggs
- 2oz unsalted butter
- Place sugar and grated lemon rind in a bowl, whisk the lemon juice
together with the eggs, then pour this over the sugar.
- Add the butter cut into little pieces, and place bowl over a pan of
barely simmering water.
- Stir frequently till thickened – about 20 mins.
