Lemon Curd


  • 3oz caster sugar
  • Grated zest and juice of 1 juicy lemon
  • 2 size 1 (large) eggs
  • 2oz unsalted butter


  1. Place sugar and grated lemon rind in a bowl, whisk the lemon juice
    together with the eggs, then pour this over the sugar.
  2. Add the butter cut into little pieces, and place bowl over a pan of
    barely simmering water.
  3. Stir frequently till thickened – about 20 mins.
