Italian Pear Cake

Yummy way to use up some pears.
Serve with icing-sugar sweetened mascarpone.


  • 5oz unsalted butter
  • 4oz caster sugar
  • 5oz self-raising flour
  • 3 large eggs
  • 2 or 3 pears
  • 2tbsp granulated or demerara sugar


  1. Preheat the oven to 180°C.
  2. Cream the butter and caster sugar together.
  3. Beat the eggs, then add to the mixture a little at a time, alternating with spoonfuls of flour.
  4. Butter a 8″ square or 9″ round cake tin, then scrape the mixture in.
  5. Peel and halve the pears. Remove the core and stalk, then slice.
  6. Lay the slices in fan shapes on top of the batter, however best fits your tin, and sprinkle on the granulated sugar.
  7. Bake for about 40 minutes, when the batter will have risen over the pears, and turned golden-brown.
  8. Cool in the tin, and either serve warm as a pudding, or completely cooled as cake!
