French Apple Tart

Serves 4.


  • 6oz plain flour
  • 3oz butter
  • 2oz caster sugar
  • 1 egg
  • 3 green eating apples
  • 3 red eating apples
  • 2tbsp apricot jam
  • lemon juice


  • 9 inch flan dish


  1. Peel the green apples and cut into quarters. Remove core and slice
    quite thinly.
  2. Put apples in pan with 2 tbsps watre. Cook over low heat until soft
    (about 5 mins). Stir with wooden spoon.
  3. Sieve flour into bowl. Add butter cubes and rub into flour.
  4. Separate egg. Add sugar and egg yolk to flour mixture and squeeze it
    gently into a ball (add a couple of drops of water if it is too dry to
    stick together).
  5. Sprinkle some flour onto board and rolling pin. Rool pastry out to
    about 10in/26cm wide and 1in/2cm thick.
  6. Line a 9in/20cm flan dish with pastry. Trim edges and put in fridge
    for 30 mins. Then bake for 5 mins at 200C/400F.
  7. Remove from oven. Spoon in the cooked apples. Slice red apples, dip
    in lemon juice and lay them in circles on top.
  8. Mix jam with 2 tbsps hot water and spread over apples. Bake for 30
    mins until golden on top.
