Banana Muffins

These are a really good way to use up a couple of over-ripe bananas.

Makes about 15 muffins.


  • 350g plain flour
  • 3tsp baking powder
  • 150g caster sugar
  • 2 small or medium overripe bananas
  • 1 egg
  • 60ml oil
  • 160ml milk
  • 1tsp cinnamon
  • ¼tsp nutmeg


  1. Preheat the oven to 180°C.
  2. Peel and mash the bananas with a fork.
  3. Mix the flour, baking powder, spices and sugar in a large bowl.
  4. Mix the egg, oil and milk together, then stir in to the dry ingredients along with the mashed banana, until just combined.
  5. Fill muffin cases about two-thirds full, and bake for 18-22 minutes, or golden brown on top.
