Ginger Lamb Stirfry

Serves 4.

Ingredients:

  • 375g lean lamb, cut into strips
  • 2 tsp dry sherry (if available/desired)
  • 2 tbsp soy sauce
  • 1 tbsp oil
  • 1 leek, sliced
  • 1 onion, sliced
  • 2 cloves garlic, thinly sliced
  • 1 tsp powdered ginger or 1/2 tsp grated ginger
  • 400g of desired stir fry vegetables
  • Enough rice or noodles for 4

Equipment:

  • Large wok (if you don’t have one a frying pan will do)
  • Nutmeg grater if using fresh ginger

Recipe:

  1. Marinate the lamb in the soy sauce (and sherry).
  2. Heat oil in a wok/frying pan on high heat.
  3. Add lamb and marinade. Stir quickly for 5 mins.
  4. Add leeks, stir for 2 mins.
  5. Add onions, garlic and ginger plus the other vegetables. Stir
    for 2 more mins.
  6. Serve with rice or noodles.
